Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tsp sugar
  • 1 tsp salt
  • 1 cup 2 sticks unsalted butter, cold and cubed
  • 6-8 tbsp ice water

For the Filling:

  • 6-7 medium apples Granny Smith, Honeycrisp, or a mix, peeled, cored, and sliced
  • ¾ cup sugar
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground allspice optional
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 egg for egg wash
  • 1 tbsp coarse sugar optional, for topping

Instructions
 

Make the Crust:

  • In a large bowl, mix flour, sugar, and salt. Add cold butter cubes, cutting them into the flour with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  • Gradually add ice water, one tablespoon at a time, until the dough begins to come together. Divide the dough in half, shape into disks, wrap in plastic wrap, and chill in the fridge for at least 1 hour.

Prepare the Filling:

  • In a large bowl, toss apple slices with sugar, flour, cinnamon, nutmeg, allspice, lemon juice, and vanilla extract. Let sit while you roll out the dough.

Assemble the Pie:

  • Preheat your oven to 425°F (220°C).
  • Roll out one dough disk on a floured surface into a 12-inch circle. Gently transfer to a 9-inch pie dish, pressing it into the bottom. Trim excess dough.
