For the Crust:
- 2 ½ cups all-purpose flour

- 1 tsp salt
- 1 cup 2 sticks unsalted butter, cold and cubed

- ¾ cup sugar
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground allspice optional
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 egg for egg wash
- 1 tbsp coarse sugar optional, for topping
Make the Crust:
In a large bowl, mix flour, sugar, and salt. Add cold butter cubes, cutting them into the flour with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, until the dough begins to come together. Divide the dough in half, shape into disks, wrap in plastic wrap, and chill in the fridge for at least 1 hour.
Prepare the Filling:
In a large bowl, toss apple slices with sugar, flour, cinnamon, nutmeg, allspice, lemon juice, and vanilla extract. Let sit while you roll out the dough.
Assemble the Pie:
Preheat your oven to 425°F (220°C).
Roll out one dough disk on a floured surface into a 12-inch circle. Gently transfer to a 9-inch pie dish, pressing it into the bottom. Trim excess dough.
