Apple Cranberry & Cinnamon Crisp

This fun and easy recipe will have you tucking into a delicious dish that has an extra layer of crunch to it due to the inclusion of Himalayan rock salt.

  • Shallow oven proof dish - or individual dishes if preferred

Ingredients
  

The main ingredients

  • 6 red or green apples - peeled, cored, and sliced into thin pieces
  • ¼ cup dried raisins
  • ¼ cup raisins
  • Pinch of ground cinnamon
  • Pinch ground nutmeg - or freshly grated if you prefer
  • Himalayan salt rocks – break into even-sized pieces - not too large
  • Himalayan salt to sprinkle on top

For the crumble

  • 1 cup All purpose flour
  • 1/2 cup of rolled oats
  • 3 tablespoons margarine
  • 1/3 cup brown sugar

Garnish

  • Himalayan pink salt to garnish

Instructions
 

To make the fruit filling

  • Cooking method:
  • Pre-heat the oven to 180 degrees
  • Peel and core the apples
    Peeled apples
  • Slice thinly into even-sized pieces
  • Place in the mixing bowl along with the cranberries, raisins, cinnamon, and nutmeg.  Gently mix all the ingredients together.
  • Place the Himalayan salt rocks evenly over the base of the over-proof dish.
  • Pour the fruit mixture over the Himalayan salt rocks.

For the topping:

  • In a separate bowl combine the flour, and sugar.

  • Add the butter and using your fingertips gentle rub until the mixture resembles breadcrumbs.
  • Add in the rolled oats and stir thoroughly
  • Cover the fruit mixture with the breadcrumbs
  • Place in a pre-heated oven for 45 minutes until the top is a nice golden brown
  • Sprinkle lightly with some Himalayan pink salt just before serving for an additional crunchy texture

Serving suggestion

  • Serve with ice cream during the summer or warm custard during those cold winter evenings

Notes

Top Tip: Tip: make sure your hands are cold when mixing or the butter will melt.
