Creamy chicken with bacon penne and sea salt

Ingredients
- 1 tbsp olive oil
- 2 boneless chicken breasts– cut into small equal sized pieces
- 100 g lardons - smoked or unsmoked
- 4 tbsp white wine
- 100 g frozen peas or broccoli pieces
- 5 tbsp double cream
- 220 g fresh cooked penne
- 1 tbsp fresh-cut parsley
- Sea salt and fresh black pepper
Cooking Instructions for creamy chicken with bacon, penne and sea salt
Slowly heat the oil in a deep non-stick pan, being careful not to burn it
Gently add the chicken pieces and cook for 5 minutes, turning each piece over halfway through
Add the lardons to the pan and cook until brown and crispy
Pour in the wine and warm through until it starts to bubble and reduce slightly.
Stir in the peas/broccoli, cream, and penne and thoroughly mix through ensuring everything is coated in the sauce
Season with flaky coarse sea salt and some fresh ground black pepper
Cover the pan and let the mixture cook for a further 5 minutes, until the chicken is thoroughly cooked through.
Sprinkle over the parsley and a small amount of coarse flaky sea salt just before serving
