- 1 cup dry quinoa
- 1 can beans chickpeas
- 1 handful of black & green olives
- 1 chopped tomatoe
- 1 chopped cucumber
- 2 medium cloves garlic - diced
- 10 small sliced basil leaves
- 1 cup broccoli cut into small florets - optional
- 1 cup chopped low fat mozzarella - can substitute with feta cheese
- Juice of 1 lemon
- half a bag of rocket salad - or mixed salad leaves
- Kosher salt & black pepper to taste
- Extra-virgin olive oil & balsamic vinegar to taste
Cooking Instructions for Caprese Quinoa Salad with Mozzarella Cheese
Cook the quinoa as per the instructions on the packet
Set aside the quinoa and let it cool
Chop and prepare the remaining ingredients
Combine all the ingredients (except the oil and vinegar) into a large bowl and mix thoroughly
Place in the refrigerate and chill for at least 30 minutes
Just before serving add the extra-virgin olive oil & balsamic vinegar
