Ingredients
  

  • 1 cup dry quinoa
  • 1 can beans chickpeas
  • 1 handful of black & green olives
  • 1 chopped tomatoe
  • 1 chopped cucumber
  • 2 medium cloves garlic - diced
  • 10 small sliced basil leaves
  • 1 cup broccoli cut into small florets - optional
  • 1 cup chopped low fat mozzarella - can substitute with feta cheese
  • Juice of 1 lemon
  • half a bag of rocket salad - or mixed salad leaves
  • Kosher salt & black pepper to taste
  • Extra-virgin olive oil & balsamic vinegar to taste

Instructions
 

Cooking Instructions for Caprese Quinoa Salad with Mozzarella Cheese

  • Cook the quinoa as per the instructions on the packet
  • Set aside the quinoa and let it cool
  • Chop and prepare the remaining ingredients
  • Combine all the ingredients (except the oil and vinegar) into a large bowl and mix thoroughly
  • Place in the refrigerate and chill for at least 30 minutes
  • Just before serving add the extra-virgin olive oil & balsamic vinegar
